A Very Target Valentine's Day

Both of my kids have the flu, but yesterday we were totally fine, doing our Target stock up, and I’m so glad we did. We are using everything we bought yesterday to help alleviate these symptoms. water with electrolytes zinc OJ tissue Honest juice boxes bleach wipes chicken noodle soup detergent for all those blankets!!! Banana Sushi

We’re on day 4 of our 10 day reset food and fitness challenge with Cara Clark Nutrition and this snack is my new favorite go-to. It’s so good, my kids are even making it after school! Potato Bacon Soup

When it’s 7 degrees and dark outside, its hard to de-quilt and get the day going. Add two additional humans on to the morning routine, and it’s no wonder I need a cup of jet fuel to begin my winter mornings. Jet-fuel consumed, today we were all craving creamy, comfort food. It wasn’t our plan to make Christmas cupcakes this year, but when we found these adorable nut-free Wilton gingerbread people, we couldn’t resist. The recipe we found online had over 240 positive reviews for “decadent chocolate cupcakes” and we decided to give it a try….after two cups of coffee! FIRST: Preheat your oven to 350. You didn’t think cookies were just for the kids, did you? Of course not! Grown up cookies just have fancy names, like biscotti, or macaroon or petit fours.  All go great with coffee or hot cocoa or tea! Christmas Eve is quickly approaching and I like to keep things super simple, especially when family is visiting. I’d rather be spending time WITH them, not doing tasks in the kitchen. You have all heard me talk about my best nut-free mom friend, Jessica. Well today, I came home from another school event to find nut-free treats at my door. Christmas Eve Eve Dinner

Christmas Eve Eve is celebrated on December 23 and we traditionally have a Mexican Fiesta. This started a few years back when my Dad brought handmade Tamales for dinner. It’s a great meal, and nice to have something different during a time where many meals are heavy and extremely unhealthy. Tamales are not healthy, but all the sides we make with it are.
