Nut-free Easter

Over the next few weeks I’ll be sharing my Easter basket ideas for a nut-free fun Easter! I ordered these jammies a few weeks ago from Chasing Fireflies. Yes, they were a small fortune, but I just love watching my two bunnies come hopping down the stairs on Easter morning to find their baskets in matching jim-jams.

Mint Chocolate St. Pats Cupcakes!

Usually for St. Patrick’s Day, I make my all-time favorite recipe, Guinness chocolate chip cupcakes with a chocolate ganashe. The only problem is that I don’t like to serve these to the kids, for the obvious reason (even though the alcohol is baked off, it just sounds bad, right!?) On St.Pats this year, I did the traditional big dinner; braised corned beef, cabbage with balsamic reduction, roasted carrots and potatoes. For dessert, I waited 3 days before FINALLY getting to it, (hey, I was busy with my daughters fundraiser) chocolate cupcakes with buttercream mint frosting. The dinner turned out great, and I used Pioneer Woman’s recipe from FoodNetwork. It was…

20 Minute Quesadillas

My internet connection is slower than 14.4kbps right now. If you’re a 90s chic, you know exactly what I’m talking about. Followed by the “You’ve Got Mail” chime. Slower than slow – hoping to at least get this recipe down to share with you! I’ve been thinking about these tasty quesadillas all day long. Yes, they were THAT good – and I also had some left over for lunch today. So here goes. Here’s what you’ll need: McCormick Quesadilla season packet 1 pound boneless, skinless chicken breast, organic if possible (you don’t want a giant, hormone induced chicken breast. If you get that kind, you’ll need to pound it down…

Cross-Contact vs. Cross-Contamination

Uggg. I wish I could turn this side of my brain off, but I can’t. These two terms have been spinning in my head for the better part of this week now. I have wanted so badly to define them and talk about them, and it seems like this is the best place for that. So, cozy up. Here’s what’s on my mind. What a sexy Saturday night this is! Atleast HBO is on. And I have ice cream. mmmmmm. What is cross-contact? Cross-contact happens when one food comes into contact with another food and their proteins mix. As a result, each food then contains small amounts of the other…

Greek Burger Recipe Review

Last week I shared a Greek burger recipe that I was super hesitant to make. It turned out amazing. Tasted like a gyro 100%. The 5 minute cucumber sauce was easy and delish. We added a side of Israeli couscous with herbs on the side for the kids. It was amazing. This meal was packed with Greek flavor and we will absolutely make it again! For a fast weeknight suggestion: Pat the burgers out the night before so all you have to do it grill / pan fry. The salad and sauce could be made on the weekend, just keep refrigerated.

Nut-free Cookies at Whole Foods

Bless her heart! My MOM! She’s amazing. She went to Whole Foods on Farwell Ave. on Valentine’s Day to scour the shelves for safe treats for our nut-allergic lady here and found these!  They contain wheat, milk, eggs and soy.  They taste like a homemade cookies, delicious.  Just one more quick option for parties, school, etc. Thanks, Mom!

Turkey Italian Sausage Skillet

It’s cold and flu season and it’s wreaking havoc on our household this year. It destroyed our vacation and is dampening our weekend family plans. Just when we think we have one virus down, another one pop up over night. This week our little man has the croup and my husband has a bug, too. Last week , I was sick with influenza, the same bug that both kids had while at Disney. Luckily, my hubs and I have been able to take turns being sick so at least one of us can keep things going. He made a TON of great recipes last week that had everyone cleaning their…

Disney Reflection

It’s easy to just assume this was the worst vacation ever and that we will never spend this much money at Disney again. Yes, the latter is true. But, there were some huge moments during this vacation that I will never forget. We were all a team and never wavered, never fought, never cried. We were adults about every shitty situation that came our way and we dealt with it. How you deal with things sets the standard for children and how they will someday deal with life events on their own. It’s life. Stuff happens. My kids showed exceptional kindness and caring toward each other while they were BOTH…

Disney Vacation Day 9

Woah – Day 9?! Here we are, Hilton Homewood suites ROCKS! They have free appetizers and drinks at night and a huge complimentary (nut free) breakfast too. Makes it easy, we dont have to leave for meals, BUT, we’re on International Drive that has a TON of cool places to eat!!! There are about 20 restaurants in a 6 block radius. Today we woke up, had breakfast and Doug, Carter and I went for a walk while my Mom and Chloe rested up. We walked to a common area with a huge aquarium, play space, Ben and Jerry’s Ice Cream, Crepe Restaurant and huge ferris wheel. Carter had a ball…

Disney Vacation Day 8

Yahoo! Today is supposed to be the day we fly home, instead we are going to pool-it and lay out and watch the kids splash around in the Mickey Mouse Splash Pad, use the water slides, rent a boat, play in the sand, drink fluffy pool drinks, you know?! Wait….Chloe just woke up with fever? A fever. Chloe woke up with a fever. Ok, well now what? She’s crying and says she feels sick and doesn’t want to do anything. Two days ago, we booked an extra night at Bay Lake Tower and rescheduled our flights for Friday morning. So, we have this extra day……do we spend all this money…

Disney Vacation Day 7

Today is Wednesday, and it’s our Magic Kingdom Day! Last night we took the shuttle to Disney Springs. Wow – it was amazing. I never expected to listen to so much live music, see so many great sights, get the kids on more rides?! We had dinner at House of Blues where the staff was AMAZING about food allergies and cross contact. The chef came out and talked to us, even brought out labels and double checked on the manufacturing facility of the corn bread. SO SO SO thankful for caring peeps like the ones at House of Blues. This place was very eclectic. The music was amazing, the decor…
