If you’re looking for a filling morning on-the-go breakfast, these muffins are the best one’s we have made so far! And the difference is soaking the oats for 20 minutes in milk. It sounds like an annoying task, but honestly, it MAKES these muffins so fluffy and delish. Enjoy – both kids devoured them today! Ingredients 1 cup (240ml) Sassy Cow Milk 1 cup (80g) old-fashioned whole rolled Quaker Oats 1 and 1/4 cups (156g) wheat King Arthur Flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon ground Penzeys cinnamon 1/2 teaspoon salt 1/2 cup (115g) unsalted butter, melted and cooled 1/2 cup (120ml) honey (or 1/2 cup sugar) 1 large egg,…
Whole Wheat Banana Oat Muffins
We are having a beautiful fall; however, it is almost winter in Wisconsin. The days are darker, colder and comfort food is on our minds. This week we decided to make some healthy-ish breakfast muffins (always comforting) since we have a lot of activities. If the kids want to sleep in a little, these muffins allow them to eat in the car on the way to school + activities. And since I made them, I feel OK with that! Prep time is about 10 minutes, then they bake for 18. If you want to get it all done in 1 batch, have two cupcake pans sprayed or lined and your…
Those Costco Blueberries…
I’m sure this has happened to you. You get to the grocery store and the produce looks amazing, so you over buy? Yep. {Raises Hand} Guilty. Maybe it’s my crazy, creative left brain that just goes nuts with how beautifully displayed everything is {ahem, HyVee + Metcalfes Sentry for sure}. So perfect + colorful. Generally, we do a good job eating up our produce. Its summer, so eating fresh is absolutely more enticing. This week we purchased jumbo boxes of blueberries, grapes and strawberries for the 4th of July festivities and recipes. WELL…it was a little overboard. Strawberries and grapes are gone; however, the blueberries! They were just chilling here…
Chocolate Chip Ghost Muffins
Tonight we baked pumpkin muffins for school tomorrow to celebrate Halloween! We also finally carved our pumpkins, and holy cow, carving an owl was harder than I thought! But we did it, all of us (as in all four of us carved one pumpkin because it was huge and we ran out of time!), and the pumpkins are on the front porch ready for tomorrows trick-or-treating! The kids are excited for “The Great Pumpkin” to arrive, since we do not keep our candy, the Great Pumpkin leaves a small little something in exchange for the kids candy (that is always donated). This year I found glow in the dark Thomas…
Blueberry Breakfast Muffins
One of my kids is staring at the back of my head from the top of our stairs as I type this, and I refuse to turn around to see what they need….it’s been a looooong weekend, a preview of what summer will be like, perhaps, and I’m just a wee bit annoyed. I need some down time. A mommy break here. I’m blogging, something I enjoy, for me. And I need it. I need to take time for me to be a better person to help you. You being kids. It’s a cycle. Anyway, typing. Typing. Typing. Blueberry Oat Flax Seed Breakfast Muffins…MMMMMMMMMMMM. We had a huge container of…
