It’s the night before the first day of school and our house is all a buzz. The kids have been busy getting their outfits ready, shoes out, backpacks packed (although pretty empty since we did the ship-directly-to-my-school-awesomeness this year). Exciting day in our household. Last minute haircuts, too! (Did you notice the Ninja Turtle jammies in the photo above? Quick Meals

Hey there – it’s been a Monday! Today was full of crazy, but I’ve found the silver lining. I was able to talk to not one, but two of my cousins today. It’s been a while since I’ve talked to them and it was nice to catch up, connect. It’s nice to know family always has your back. Comfort Food for a Full Moon

When you work in healthcare, you know that a full moon is like Friday the 13th. The crazy come out of the woodwork. So what better to have for dinner, after a super long day, than a comforting meal of homemade meatloaf, sauteed parmesan zucchini and creamy mashed potatoes?! Nothing. There is nothing better. Perfect Pilaf

Rice is one of my favorite things to make. Now that I know how to make it. I used to suck at making rice. Then I tried a different brand and method, and it clicked for me. We don’t use instant rice – because I can’t make that kind. I always mess it up! We use jasmine rice. Typically, I buy it in bulk since we go through so much. The brand is Rice Select and we use both the Orzo and Jasmati Rice. They come in nice plastic, resealable containers. The kids use the containers for projects when they are finally empty. Good stuff. 'Twas the week before Spring Break!

…and we’ve totally got this! Most important news first: Did you catch last nights final episode of Big Little Lies?!  I don’t want to give it away, but it was AMAZING! This series was by far my most favorite TV series to date. The entire cast did a wonderful job – the chemistry was remarkable. The final scene was very touching – a bond between girl friends and the support they give, just really hit home. Loved it. Chickpea Curry with Rice

Tonight’s meal is a no-brainer.  Curried chickpeas and rice is fast, easy and packed full of flavor (and it’s NUT-FREE!).  A friend of mine on facebook mentioned this recipe once and I have never forgotten about it! Plus, it’s meatless Monday, so this recipe fits perfectly into the plan. I found this particular recipe from my new favorite Foodnetwork Foodie, Ree Drummond, she’s also known as Pioneer Woman.
