5 Minute Mom Meal

With playing catch up this week, and trying to get back into a routine after vacation, I found myself struggling to eat right.  We had a lot of leftovers from the weekend (Thanks to my helpful husband, who also loves to cook) so the kids really finished them up during the week – I was so tired of eating left overs, I decided to make this, and LOVED it.

Strawberry Spinach Chicken Salad

  • two large handfuls of fresh organic spinach
  • 1/2 cup of rotisserie chicken, shredded
  • 8-10 strawberries, halved
  • small sprinkle of cheddar cheese
  • petite carrot sticks, a handful
  • lite balsamic dressing

Combine all ingredients in large bowl, top with dressing. Enjoy

It was so good.

So easy and fast. I forget that sometimes it does not take much at all to whip up a meal for myself.  I’ve been stuck in the pita and hummus rut, so this was a great way to freshen things up. Although rotisserie chicken isn’t the healthiest, it was fast and delicious during my crazy catch-up week.
